A skipped pumpkin leaves a larger blank spot than a skipped bean.
Also, pumpkin seedlings just emerging are very subject to cucumber beetle destruction in some areas....plant extra to make up for losses is likely the idea.
Also some gardeners plant three squash seeds close together and leave them that way....not me.
