As a fellow beef cow calf guy that doesn't own their own chopping or wrapping equipment I urge you to try something other then triticale / peas as a nurse crop for alfalfa. I like annual ryegrass. At 10# per acre seed cost is about $6/acre and if you plant a true annual it will winterkill the first winter leaving only the alfalfa. It dries much better than oats so much better chance of making dry hay out of it. I'm cutting mine this afternoon since we had 2.7" Tuesday night. Will semi-windrow it and ted it a day later like you plan on. Here are some pics of my first cutting on new alfalfa / ryegrass last year.
