Quite  a bit of wheat harvested around here as small grain silage.... will be fed to dairy cows.  As a rule, they like it if harvested boot stage.  If it heads out before it gets mowed, it will most likely be used as a forage for dairy heifers. 

How thick is your wheat?   is it weedy or is it fairly clean?  If it is weedy, that will decrease the value of the forage. 

Being organic or not organic..... the only difference I can see here is that being organic means you should have an easier time marketing to potential organic dairies...... beyond that....?????
