The chip and pin method is used EVERYWHERE else in the world. It is more secure because it produces a new transaction code for each purchase, whereas the stripe is not doing that. I know I don't have the technical names right, but the swipe method is not safe and is going out for a reason.
Also, the chip isn't readable over the air, it has to be in contact with the reader, so his spat about converting his phone could only be true if he had his hand on your card and had a chip reader.
