Use good forage sorghum if wanting to chop. Some good varieties will make about as much as good corn silage. But you might have to swath it and let it lay for a day to get it to dry down before chopping it. Lots of choppers were chopping in December last couple years cause it wouldn't dry down and had late freeze.

Also if you let it mature and silage it your nitrate would have to be ungodly high to have a problem.

Reread your post if your looking for something to chop this summer maybe forage oats or something. The forage sorghum would be one time one big crop for the year.
