I have a 30 foot planter and 90 foot boom so instead of counting every row I identify a guess row then count 6 in.

Finding the guess row is key and if you don't have auto steer on your planter it should be fairly easy.

I drive within the row...
Even if it's really hilly I have found you don't truly drive on top of many plants. When the corn is young it can be bent over quite far and still be fine. Sometimes if it's dry enough even completely run over...
