It doesn't need to be perfectly vertical, you can turn it without spinning your body with it - doesn't seem to matter if there is a pause while you change hands or whatever.
Note once you get a good calibration it can go for months with no need to do again if you are flying relatively local. 
If things get accidentally messed up the app will tell you.
