I have experienced the same altitude issue on a desktop planned flight as well, only on Android app. It's not perfect just yet, I think DJI has been making it difficult with all the software changes. I almost always fly at 390ft, still experimenting with overlap. Side overlap maybe more important than frontal in my opinion. Time to a complete stitch can vary wildly, especially on the free tier and the difficulty it's having stitching.
You should post your experiences on their forum as well. They will look at the server logs and see what's going on
