NW Washington | Moldboard plowing on the contour is not an easy task and you will have a tough time finding a reversible plow that small with an land hitch. A semi-mounted plow with a steering rear wheel would probably be your best bet.
Adjusting the plow is a problem too because things change depending if you are throwing soil uphill or downhill so having a method of changing the landing or pull point on the plow on the run would be nice.
Also clean plowing with a moldboard plow is also apt to increase soil erosion on sloping fields.
So, in my opinion it would be better for the soil and much easier on you if you used a chisel plow for primary tillage which can work in contour on hillsides and works in either direction unlike a regular plow. You may have to make another pass or two with secondary tillage tools to get the seed bed you want. Or you could move to no-till which would be even less apt to erode and has no tillage problems or expenses.
