Subject: RE: A2 milk?

Faunsdale, AL
The "A2 milk" deal is an attempt to capture a niche market. At the present time that niche must be created by the producer. Unlike the organic market it hasn't gone mainstream in N. America at this point.

A2 is a genetic trait that codes for a difference in type of milk protein that is said by some guy in Australia to have all sorts of benefits. In my mind it has even less basis in reality than "gluten free" foods. For what its worth, of all dairy breeds, Jerseys have the highest % of A2A2 cattle.

This protein difference has nothing to do with lactose intolerance. That is a separate problem entirely.
