This fall I baled cornstalks where we had cover crops. On a chopping cornhead I only turned the choppers on the center 4 rows out of 12 and ran stalk stompers on those rows. Windrowed out the back of the combine. Took a long time to make a bale but very clean (no dirt). I am using those bales to grind with grass hay for feed. They got put up dry and when you open one now, there are a few green blades of rye in them. I think chopping stalks or raking would pull in a lot more green and make the stalks harder to dry.
