Our 3 year old can be stubborn, not nearly as bad as what your describing but challenging at times. One thing we found that helps is letting him make decisions so he feels in control sometimes. For example We put out 2 or 3 pairs of shoes in the morning and he can pick one. Or, we let home pick which fruit for desert out. 2 or 3 we put out. He gets to make a decision and feel he has a little control but ultimately we are still defining what that decision is. Seems to keep him a lot more settled when he feels he has some control and doesn't seem to fight nearly as much on the big decisions we make like bedtime.
