I like steaks cut at 1" and I like the bone left in, I think you get more flavor out of a bone in cut and the dog enjoys the bones after we are done. Grind-wise I agree with the others, just leave it as it comes if this is from a fat steer/heifer. A 2# package of burger works well for us, if we don't need it all then it can be put in a freezer bag and labeled or refrigerated for use in a day or two. Round steaks I like cubed, we make everything from baked minute steak to chicken fried steak out of them. Roasts we like about 3#. Some stew meat since my family likes beef stew. I usually keep a 4 or 5 rib roast instead of steaking it into rib steaks for a prime rib roast. | |
