I think u are smart to be transitioning. We use to have alot o organic like 1700ac. Wore us out but we did very well every year. We only have 300 ac. Left which is irrigated but I think transitioning with alfalfa would be easier and end up cleaner. If I was going to transition more it would only be irrigated why risk drying up a 2000$ gross crop it is normally a drier climate here and we can control the environment with a Pivot. most guys that have tried what your doing give up before ever harvesting a organic crop. I have some non gmo on one quarter that was grown for a company that may have needed it for over run but sounds llike they have plenty. I may check into J.E.M as well. If u ever want to talk about organic or all the other questions my email is good.
