Southern IL | canned venison is excellent, be sure to trim all fat, I like to use pint jars and add a little salt and a beef bouillon cube. Quick and easy "beef" and noodles, or a quick barbeque. Have canned pork, beef, and venison like that all with success. Less food in the freezer to store. I have actually canned deer burger before, tasted and smelled like roast beef.....but the appearance was less than desirable...it looked like canned dog food! Look up canning meat on Youtube.
