1) Buyers want to assure they will have a supply of product at harvest or shortly after, so they tend to bid a little harder to assure they will have a supply or at least a price locked in.

2) Harvest only comes once a year. Spring is halfway between old crop and new, so probably the most uncertain time of the year when farmers are deciding what to plant, and buyers don't know what the supply will be like at harvest.

3) A combination of everything, and the emotions of millions of buyers and sellers. We all know how reliable emotions are.
