Steel cut oats digest more slowly = lower glycemic index. Good if you are diabetic. Steel cut is supposed to retain a bit more vitamins, minerals too. Compared to most other cereals any oat meal is better for fiber, glycemic index and your cholesterol level. The coarser the processing the better.
