Subject: Pie Crust

45 miles south spingfield il.
My cousin Edna's recipe calls for lard OR shortening but the odd thing is the lard required is quite a bit less.
This recipe was brought over on the Mayflower ( well its really old anyway!!!!)

Pie Crust
4 cups flour
1c.plus 2T.Lard ( or 1 3/4 c. shortening)
1 1/2 tsp. salt
1 egg
1/2 c. water
1T. vinegar
1 T. sugar
Cut Lard into flour with a dough blender. Mix in salt.
Mix egg, water, vinegar, and sugar together before adding to flour/lard/salt mixture.
Roll out.(I think it rolls out better without chilling but I do use quite a bit of flour to roll with.)
Makes 5 single crusts.

I use an ice cube in the water and replace some of the white flour with white whole wheat flour. For example I use 2 1/2 cup of white flour and 1 1/2cup white whole wheat flour. That gives it a great nutty flavor.

This is Marlinpain's wife and he wanted me to post this cause I guess he likes it a lot.
