Many good ideas given already, and I would also suggest checking if you have any community college in your area to see if they have classes in any of the areas you're looking for. Not sure where you are, but you listed WI/MN/IA - so Calmar, IA may be reasonably close? They offer a Beef Management class, have dairy training programs, and lots of hands-on farm visit programs, short-term. Also, don't forge the Free opportunities that may be put on like Conferences, vet clinic sessions put on by sponsors, state college extension programs that may be just a couple hours or one evening. ISU offers a lot of them that are probably available in your area too.
