If I have time I like making them as potato bombs but that is somewhat time consuming.  I usually just put a little bit of butter and salt on the outside. 

If I'm just making one or two potato's I have a "as seen on tv" potato cooking bag that looks like an oven mitt that you put the potato in for cooking in the microwave that works really good and cooks the potato in 4 minutes.
