SW Ohio | You say it is flat, right? My 70 bale 1036 could be pulled by my 50+/- 2240 but it would be a load and a lot of tongue weight, my 80 hp2840 is fine and the 4020 is better cause it goes faster, what makes a vineyard different? low profile? should be fine.
5000 bales ain't much, I can see your desire to hold costs down. Friend stopped by today and was wanting a "rafter" accumulator,I need to look into that one.
Dolly should be easy to come by, lots of them used on B trains and pups. I have one made out of old junk truck rear and fifth wheel plate, but no air for brakes.
