It's a fairly common practice here in the red river valley. I don't think that it has anything to do with gluten allergies, furthermore I think gluten allergies for the most part are complete hogwash. Obviously there are people who are allergic to things but hypochondria is the new cool fad in this country, and the drug and health food industry is encouraging it.
