It has to be a good representation of the market, or the cash index wouldn't work with the futures.
And no, they don't classify every animal that goes through the ring. Just the ones that represent the majority of the market.
Edit: now the direct trade reports I don't think represent the market very well, just the simple fact that so few contracts are disclosed. And only a small percent of what actually trades is reported.
