We are in process of putting a layer of foam on Morton shed roof. Building is 54x120 with 35' shop in one end. Should we leave the top ridge vent along the length of the roof open or close and eliminate another possible place for water to come in? Enough leaking on this 31 year old building we needed to do something.

If spraying the underside of your roof, you do need some room for things
to breathe. That means both top ridge and the eaves.
That means don't spray everything. The post above with the foam may seal things too tight.
My last shingle job on my house included a raised fiber roof vent product, around 1"
thick. Just enough to offer ventilation. Do a search for "shingle vent, air vent" .
These allow for some air flow without snow blowing in. You can still use a steel cover
over these.
