I think a lot of people use oak for volume...doesn't have a strong flavor. Then add hickory or apple or whatever since it can be more difficult to come up with those kinds of wood chips. Though wal-mart and most supermarkets of any size carry small bags of 4 -6 different kinds of smoking chips. I think it's kinda neat to smoke some critter you raised or hunted on your own land and smoke it with some chips from your own woods... not always handy though. We had to take down an apple tree years ago and I smoked a few Thanksgiving turkeys with that wood.
