I was thinking cap. I do not have any experience with that particular bike- but I have some experience with others. If there is no vent valve on the cap, it is possible that a vent line is plugged or that someone placed the wrong cap on the tank.

Next time it starts to die, crack the cap and see if that changes anything. If not, give it a drink right down the carb. This will help you eliminate the fuel issue and narrow it down to ignition if it does not fire.

If you determine that it an ignition issue, check where the coil is mounted. It is possible that a change in mounting position or insulators has affected the coil's heat sink. If no coil, you need someone smarter than I am to trouble shoot a mag remotely.
