The whole crops vs. cattle per acre I don't know is a good comparison. Because prime farmland will always be crops. Poor land that is not good for anything else can be utilized by cattle.

Just like out west where they graze one animal unit per 80 acres or more. You can't divide that per acre and have any meaningful information.

Biggest challenge utilizing the non-farmable land is putting all the little patchwork "pastures" into production. Often they are cut up into little pieces or hard to get to. Adds up to too much labor and infrastructure. Or the land is held by people that have no desire to have the land grazed.
