Edited to add: as Markwright pointed out they are ready to go. They were judged live and auctioned on thurs and slaughtered Friday, carcase judging is Saturday and results and presentation on Monday afternoon. Fat and muscling could be measured by ultrasound but they are also judged on fat colour, meat colour and pH. I have added a scan of the carcase points system below. The first 60 steers are sold as part of an auctioneers competition, the winner of the national competition wins a trip to the Calgary stampede to compete in their auctioneer competition.
