Subject: Bread needs very little sugar and no fat.

Fundamentally bread needs very little sugar and no fat. The yeast needs a little sugar or malted barley and then all it takes is water and flour.

There was a campaign in the 30s because kids and people were undernourished to increase the food value of bread by adding eggs and fats, its all still there. Didn't come from farmers, came from the universities studying nutrition and the lack of nutrition.
