Yeah with the 2630, you can disable all "Greenstar" functions, the 2600 won't let you do this.
As far as making the harness, here in the US I'd usually go with ag express. I suppose they could ship something to you down under. Also, you can combine a couple stock Deere harnesses if you are comfortable with wiring. It's just a matter of getting 12V, ground, switched power, can hi, and can low to the appropriate pins on each display
