Midwest | Multi-year averaging feature is nice, especially when you have more than one crop you'd like to analyze at the same time. Some of the finer details were explained here.

It grids the maps based on criteria you give it. It will normalize if you choose, based on 2 different methods, again your choice. (see link above)
Once you've used the equation function a bit it's pretty easy I think. It also helps to see a few done in front of you (the class would do that for you) or at least see how they're laid out when they're done.
If you haven't installed Advanced before, you can modify the install to Adv and you'll be on the free trial and try it yourself w/ all your data. 3D view is also nice. You can make 3D plots or view the map in 3D (2 very different functions) I think seeing almost any map in 3D makes it easier to understand especially if it's not your field and you know it like the back of your hand.
