My son was dating a girl that had a confirmed diagnosis of Gluten allergy. I fixed a ham thinking I was safe. When she saw the ingredients she became very worried. We called our local meat market to see if any of the ingredients in the curing process contained gluten. She could eat our ham, sausage and bacon. So yes, sometimes gluten is used in the curing seasonings.
