| Well it's grown in Europe too, although I prefer the smaller wild dandelion for salads (one of the best winter and spring salads, with walnuts and warm lardons). It's frequently covered in straw before harvesting, which you can't really do with wild dandelion.
But it's collected long before the flowers appear, so there's no weed seeds flying for months from these fields, unless they grow it for its roots (makes a great coffee replacement similar to chicory, I have both at home). Great flower for honeybees and butterflies.
I knew it had a structural impact on soil with its long pivot root, but I didn't know about these added benefits.
By the way, I read recently that they are trying to make rubber from the Russian dandelion latex, about 1 tonne of latex per hectare (2.4 acres).
