roaming | If the cal values don't change over a power cycle, then the accuracy of your calibration shouldn't change over a power cycle either, all other things being equal (flow rates, moisture accuracy, etc.)
Just because it was dead on accurate on one 7800lb load doesn't mean that it will be accurate at other flow rates or in other moisture conditions. It's a good sign, but not the end-all.
4 loads is really the minimum. I'd want at least another load at each flow rate, making sure to keep the load sizes all roughly equal, and the % errors close as well.
