If you are creating an as-applied map then yes you are limited to 2 varieties as that function is more for creating split planter data and adding additional data (starter fertilizer, etc).

If you have a pretty good idea where your variety lines are, I would suggest opening up a new map with your field boundary and creating a new generic layer. This will take you to the edit screen. Use the Copy from Layer tool, select the field boundary, and select the spatial data only option.
Then create different polygons using the divide by polyline and polygon tools to designate where your different variety locations are.
Add in the Date/Time, Target Rate(Count), and Variety attributes on the Data Grid tab and fill them in.
Hit Save and change the operation to planting and keep the product at NO PRODUCT.
