If they start on the outside and work their way in, you would just record the outside pass first, then AutoTrac from there. The most efficient way to do this would be with Adaptive Curves. Now if they don't stop to make completely straight lines going each direction, then use adaptive curves. If they stop, turn, then start heading south let's say, I would use Swap track and have a line running east/west and a line running north/south as an example. Then when they get to heading the next direction, you just hit that toggle button and it changes your line.
