Best practice to use 1 per display, just incase the data is corrupted while transfering out of one monitor. That way, you don't lose all of your data.
4GB per monitor should last a long time, but I would recommend cleaning off the sticks each year and having a clean one. Makes it easier to manage the data and some monitors, like Case, have the tendency to overwrite/combine data.
