| Sounds like a good time for smaller producers to get into the pork industry and start dealing directly with consumers. Contrary to what many believe, people do care about where their unprocesed food comes from and are willing to pay a premium for it. This is why there are people supporting their families on 10-40 acres of land around here. Sure, they spend their summers hunched over in the fields tending to their crops, but they are producing a clean, safe, fresh, local product that's in high demand with little overhead and getting a premium for it. A business person's dream.
