Subject: RE: Carcass results, rib eye generally

New Mexico
runs bout 1" per 100 lbs live weight.
costs less to feed to backfat of 0.1 range if possible and grade choice or high select ( genetically that is many times not possible ).

rib eye area is generally higher per weight unit with less backfat.

yield grade is All about rib eye area, and no or only slight backfat cover, btw.

lately the choice to select $$$ spread been running minimal to no premium for choice cattle.

marbling is All genetic.
they're born with intermuscled fat cells that are not larger ( thus visible ) until frame and muscle growth caps....then feed expresses the larger marbling or intermuscle fat cells.

backfat metabolizes Last in the growth phases.
cost 2.5 to 3x more feed to add backfat vs the other stages.

best cattle i've ever seen went 0 yield grade, choice quality grade.
weighed 1170 live, dressed 67.8%, had 14.7" rib eyes, .1- backfat.
1st set of those the usda graders had ever seen at the time ( mid 80's ).

yield grade always rounds down, so your 3.4 or 3.8 yg cattle are called yg 3's for example.

some folks ultrasound em at 1,000 lbs.
sort to optimal out date, optimal grade, thus optimal feed used.
sort the yg 4's off with no marbling, sell em.
the afore increases feed efficiency on everthing and maximizes your grid up premiums if you use those.
