When does wheat harvest normally occur in the Pallouse? We are looking to visit that area around July 25th.

A normal weather year and the 25th of July is too early for most of the palouse from Spokane to Moscow/Pullman area. Mid August is when wheat harvest is in full swing most years. West of Colfax they are usually going by then though. Also down by Walla Walla they are cutting by then and have some very steep hills.
