You drill rice in most cases. There are three main practices of watering in my area, zero grade (perfectly flat), graded with a specific fall allowing levees to be straight and an equal distance apart, and crooked levee. This will be Following the contour of the land to get water evenly on the field. We row water beans because the same leveling that allows us to use straight levees allows us to water on rows very efficently.
