Disposition, frame, and did I mention disposition. I've tried a handfull of Sim-Angus, not thrilled..........but I'll be honest, I'm a hog farmer not a rancher. Bought some new (to us) cows the last couple of years.......Angus/Simmi/Maine cross. Very happy with them except for the feed intake.........was hoping gelbvieh flesh easier.....dunno.
