I'm sure I'll offend people with this but, I'd stay away from the gelbvieh. I'm sure there are good ones but most of the ones we've fed tend to be slab sided, jug headed, and not very thick keep in mind they originated from dairy stock. I'm not sure why your not interested in simmis they cross great on angus cows. I'd also keep in mind charlois or horned hereford.
