The raise - lower - stop deal is a matter of having a set of contacts on the relay to hold til the stop button is pushed. If it is a legal deal, the manufacturer probably uses a contactor that doesn't have another set not being used. Otherwise, it is the same idea as a start stop buttons on a motor with one extra switch.
