Northern CA | One problem I have with organic besides the lack of options is maintaining soil health. I hear people and see it above being mentioned leaving the soil in better health. Your farm better be in a location that has fertilizers that are available for the organic market, manure, compost, gyp, etc. I find some of the most profitable organic farmers are those that sneak something on. I think the regulators are cracking down on this, especially on the pesticide side. I think the fertility side will be harder to track.
I could never sit back and know that a "fix" for a struggling field is just a scoop or a pour away.
