Faunsdale, AL | Greens are a taste I had to grow into. I think folks were looking for anything that was not cornbread and salted pork in the winter back in the old days.
Collards seem to be the most traditional southern greens, but mustards grow wild in our winter grazing at times, so I expect even those that didn't plant a garden could have found those pretty easily. Have to pick them young or they get pretty hot.
I think molasses is pretty standard wherever it's made, but the syrups are really different from one old timer and region to another. | |
