Rossville, IL | Yes, the adrenaline released into the blood after being shot will affect the taste. After bumping the deer and shooting it again, it got a second rush of that adrenaline. This makes the meat tough and will give it a "gamey" taste.
If you go to a good processor, you will get your deer back. If you go to a processor that mixes 3 or 4 deers "trim meat" together to make specialty items, it never tastes as good.
I process my own deer and, weather permitting, try to let the deer hang 3-4 days in cool weather, then wash as much of the blood off as I can because that will affect the meat and give it a "gamey" taste. | |
