Tractor won't inject DEF until the DEF reaches a certain temp AND the exhaust temp is above a certain point (likely different between different manuf). You have 40 minutes for the tractor to warm up the DEF before it will begin its derate. Even there, it only derates to 75% over a 20 or 30 minute period, then you have 60 minutes (I believe) before it will derate to 50% and idle.

DEF can be stored in about any environment (within reason), but how long it lasts is dependent on the environment it is in. If your DEF doesn't get over 6 months or even a year old, you don't have to worry much about how you store it. The first company to introduce SCR/DEF technology to the Ag market is located in a very cold region (Finland), so I wouldn't say it is not meant for cold areas...
