Our neighbor (barn next to our backyard) does them at 500-600 pounds. He runs a couple hundred head from calf to finish. Mixed beefers and Holstein with TMR.
He also mentioned the hormones get a big frame early and after the cut they pack on the weight.
He only slits the sack, never noticed any big nastiness over there from that.
