The tax ultimately has to be paid if you are making money so better to pay some all along.
There are ways that the accountant can even out the income so you do not pay high rates but trying to keep it to nothing just delays the inevitable and then leaves few options but to pay high rates.
Bad decisions are made when people spend money just to prevent the government from getting their share.
